The use of beans, dried lentils, gram flour, corn, barley, milk, buttermilk, millet, bajra, and bread is common in cooking.

Rajasthani cuisine is also well-known for its flavorful chutneys, achars, papad, and chhach. Oil and red chilies are the most common ingredients that you can find in Rajasthani cuisines as it helps in preserving the food and reduces the need for water.   • Dal Baati Churma – Rajasthani cuisine is incomplete without Dal Baati Churma. This is the signature dish of Rajasthan. Baati is hard and unleavened bread made of potatoes, whereas Dal is lentils curry, and Churma is the ground wheat crushed mixture, cooked in ghee and jaggery.

  • Gatte ki Subzi – Gatte ki Subziis a curry dish in which gatte is gram flour dumplings that are steamed and lightly fried, dipped in tangy gravy made up of tomato, buttermilk, and spices. It is served with roti or rice. Gatte ki Sabzi is the traditionally famous dish of Rajasthan.

Ker is a wild berry that is tangy and has pepper flavour, whereas Sangri is a long bean grown in desert areas of Jaisalmer and Barmer. Sangri is found in drought areas but has 53% proteins. It is cooked with buttermilk or water and served with bajra roti.

  • Pyaaz ki Kachori – Pyaaz ki Kachori is originally famous of Jodhpur but made in all over the state.
