Pozole

Pozole that can be roughly translated to “hominy” is a Mexican dish and is basically a traditional soup or stew. This is a very common dish in Mexico and in neighboring countries. It is poblano chiles filled with picadillo which is then topped with nogada, parsley, and pomegranate seeds. The picadillo usually includes sweet-milk pear, criollo peach, panocha apple, chopped meat, and various spices. This dish is also known as the patriotic dish of Mexico as it is said that it was prepared for the 1st time for the former emperor Agustín de Iturbide.

Elote

The corn is boiled in water and usually served on a stick or in cups. The boiled corn is usually topped with salt or butter.
